Tasty Tuesday @ Whoopie Pie Place – Breakfast Casserole

This week’s recipe is one of my favorite ones to fix for breakfast on the weekends.  It can be prepared the night before and then baked in the morning while we get ready for chores or church depending on the day.  This recipe came out of an older Amish cookbook that I have.  I bought this book almost 14 years ago from the Fishers.  They are the sweetest Amish couple who opened up their home to tourists for an authentic Amish dinner which Katie would prepare.  Danny and I have shared many meals with them, and sometimes even take them out to eat to give them a break.  Even though I miss her awesome tapioca when we do that.  One of my favorite moments with the Fishers was when Katie and I were washing the dishes after a large tourist dinner, and we were singing Amazing Grace.  No music to sing along with – just our voices.  A memory that I will never forget.
