Happy New Year peeps! Welcome to the first Tasty Tuesday of 2017. Wow, another year has begun.
This week’s recipe is for Double Treat Cookies found on page 164 in “The Busy Mother’s Cookbook“. This recipe made A LOT of cookies which was perfect since I make up several cookie trays for family, friends, and neighbors as gifts.
Here is the recipe if you’d like to bake up a batch for yourself or to share…
Double Treat Cookies, “The Busy Mothers’ Cookbook”, page 164, Barbie Ann
2 c. flour
1 1/2 tsp. baking soda
1/2 tsp. salt
1 c. butter
2 c. brown sugar
1 tsp. vanilla
1 c. peanut butter
6 oz. chocolate chips
6 oz. nuts
Mix softened butter and sugar; add eggs and peanut butter. Then add soda, salt, vanilla, flour, chocolate chips and nuts. Drop on cookie sheets and bake at 350 degrees.
As seen with other recipes, there are times when directions or quantities are missing. Just for your knowledge – I baked the cookies for 13 minutes, and this recipe made seven dozen cookies. As I said above, it makes a lot of cookies. I used a small cookie scoop to measure out the dough onto the cookie sheets.
These cookies are crisp and not overbearing with a peanut butter taste. I used chopped peanuts, since it wasn’t specified what type of nut to use. They gave the cookie a little more crunch.
This is a Tupperware thatsa bowl to give you an idea of the quantity of cookies. They filled this huge bowl up to the top, and I had to put some into another container as well. My kitchen counter looked like it had the leaning tower of cookies with all the different types I baked in all sorts of containers. Thankfully the piles never tipped over.
I hope you all have a wonderful 2017 filled with love, happiness, faith, and good health. See you next week!
