Tasty Tuesday – Fudgy Brownies

As I mentioned in last week’s Tasty Tuesday post, I had fixed two desserts for our chili cook-off at church, and that I would let you know this week how the chocolate chip bars were which I posted last week.  I’d say they were a hit since there was only one left in the 9×13 pan.  Definitely easy to fix and good to eat!

This week’s recipe is for the second dessert I fixed – Fudgy Brownies.  This came out of the same cookbook as last week – “The Best of Amish & Mennonite Cooking”.  This cookbook is full of all sorts of good recipes to try.  I’d say these were a hit last week as well since not many were left.  Then again, there were not many desserts left on the table at all after the chili cook off.  I’d say our church members enjoy their sweets.

Here’s the recipe for the brownies if you’d like to bake up a batch.  I don’t think I’ve ever frosted brownies, so the cocoa frosting added a nice touch.

Fudgy Brownies, Liz King, page 387

1 c. butter, melted

3/4 c. cocoa

2 c. sugar

1 1/2 c. all-purpose flour

4 eggs

In a mixing bowl, combine melted butter and cocoa.  Mix in sugar and flour.  Add eggs and mix well.  Pour into a greased and floured 9″ x 13″ cake pan.  Bake at 350 degrees for 20-25 minutes.  Cool brownies for 15 minutes before frosting.  Cool completely.  Cut into squares.

Cocoa Frosting:

1/4 c. butter

2 1/2 c. powdered sugar

2 tsp. vanilla

3 Tbsp. cocoa

1/3 c. milk

Beat together in a mixing bowl until smooth.

The chili cook-off was a lot of fun.  There were 10 different chilis to try.  My hubby tried each and every one.  It was a nice evening of fellowship and good food.
