Tasty Tuesday – Cranberry Christmas Bread

Happy Tasty Tuesday!  Don’t let the title fool you – this bread can be baked all year long.  And we enjoy it all year long too.  There is just something about the orange and cranberry flavors that we love.  This week’s recipe for Cranberry Christmas Bread comes from the “Blessed Beyond Measure” cookbook.  So if you are like us and enjoy these flavors throughout the year, check out this week’s recipe and make yourself a batch.

Cranberry Christmas Bread, Amy, page 64, “Blessed Beyond Measure”

1 c. sugar

2 Tbsp. butter

1 egg

2 c. flour

1 tsp. baking powder

1/2 tsp. soda

1/2 tsp. salt

3/4 c. orange juice

1 c. dried cranberries

1/2 c. chopped pecans

Blend together first three ingredients.  Add remaining ingredients and mix well.  Pour into greased loaf pan.  Bake at 350 degrees for 45-50 minutes.  Makes 1 loaf.

I didn’t add the pecans, and since I was using a smaller loaf pan, I was able to bake two loaves from this recipe.  It was very moist and delicious.  And yes, it would be perfect for around Christmastime to give to your neighbors as a sweet little gift.
