Tasty Tuesday – Zucchini Brownies

 

Finally, Election Day is here.  Please make sure you get out and vote today if you didn’t vote already.  Okay, that’s all I’m saying about politics.  Let’s move on to talking about food – zucchini brownies are what is on the menu today.  I made these as another Halloween treat for work and jazzed them up with some Halloween sprinkles and eyeballs.  The recipe came out of the Tasty Traditions, Huber Family Favorites book.  I’m enjoying this cookbook – lots of yummy sounding recipes in there.

Zucchini Brownies, page 259, Eileen Huber

4 eggs

1 1/2 c. oil

2 c. sugar

2 c. flour

2 tsp. baking soda

3 c. grated zucchini

1/2 tsp. cinnamon

1 tsp. salt

4 T. cocoa

1 tsp. vanilla

1 c. nuts (opt.)

Beat eggs and oil for two minutes.  Add sugar, flour, baking soda, cinnamon, salt, cocoa, and vanilla; beat well.  Add zucchini.  Bake at 350 degrees for 25 to 35 minutes.

Icing:

3 oz. cream cheese

2 c. 10X sugar

1/2 lb. butter

2 T. cocoa

1 tsp. vanilla

Beat softened cream cheese and butter well. Add sugar, cocoa, and vanilla.  Ice cake when it’s cool.

As you can see, I did not do the icing part of the recipe.  Figured they would be sweet enough as is.  I added the sprinkles and eyeballs right after I took the brownies out of the oven and slightly pushed the eyeballs into them.

The brownies were moist, and the guys at worked inhaled them as they do most sweets I bring in.  I just loved the eyeballs.  Made them look like Halloween brownies.

I still have zucchini to use, so next week’s recipe will include zucchini as well.  And then maybe I’ll find a main dish to fix – some sort of comfort food for the cooler weather we are having.

We just got back from six days at the beach, and I’m ready to go back.  Had frost on my windshield this morning which we never did at the beach.  The weather was perfect each day – mid-60’s and bright sunshine.  Lots of yummy food and some outlet shopping.  I did fairly well with our Christmas shopping too.

Here are a few pictures from the beach.  The heron or egret picture Danny took on his cell phone.  We had never seen one in a tree before.  The other is a selfie we took while playing mini golf.  We took quite a few silly selfies, but I don’t need to bore you with our silliness.  One of hubby on the beach, and the last few are from the Salisbury Zoo – we usually stop here on our way home.  It’s a small zoo located in Salisbury, MD that has free admission with a donation station at the gate.  It’s a really nice zoo to walk around and stretch your legs before continuing the trek home.

And I really feel like this bear today with its tongue sticking out having to go back to work.  Uhhhh!
