Happy Tuesday! This week, our church is having a chili cook-off, and I volunteered to make some cornbread and a couple desserts. Since I have five pounds of ground turkey to tackle tonight for my chili, I decided to do all of my baking last night. And this recipe was one I tried out for one of the desserts. It sounded very easy to make, and I had everything in the pantry to use. My kind of recipe! And since it can double as a Tasty Tuesday post, it’s a win-win situation.
The recipe for the Chocolate Chip Bars came out of “The Best of Amish and Mennonite Cooking” cookbook that I used last week as well.
Chocolate Chip Bars, Mary Ann Mast, page 383
1 yellow cake mix
1/4 c. oil
2 eggs
1/4 c. water
2 c. chocolate chips
Mix all ingredients and put in a greased 9″x13″ pan. Bake at 350 degrees for 15 minutes. Serves 12-14 people.
Variation: Use a chocolate cake mix and peanut butter chips instead.
I did bake mine a little bit longer, since the mix was still very jiggly at 15 minutes. I can’t say how they taste, since they are for tomorrow night, but they sure smelled good when they came out of the oven. I’ll post next week if they were a thumbs up or down. I sure hope a thumbs up, since I’m taking them to church. LOL
I think the variation of a chocolate cake mix and peanut butter chips would be delicious too and might have to give that a try if these turn out okay.
We have been experiencing spring like weather these past few days, and I am loving it. Hope you are too wherever you might be. Trees are starting to bud and bulbs are pushing themselves through the dirt.

I think I need to try the chocolate ones! Chocolate and peanut butter can’t go wrong. I did Chocolate chip bars last week. Was so yummy.

I picked my copy up at Kauffman’s Fruit Farm located on Route 340 in Bird-in-Hand, PA. I’m sure other touristy stop places would carry them as well.
